Coconut Curry Biscuits

Stellar Indian-inspired flavors give these home-style biscuits a unique twist.

By Ken Bergeron

There's nothing quite like fresh-baked bread to satisfy savory cravings, and these quick and easy biscuits are the perfect fix. The classic, home-style version you love gets an upgrade with rich coconut milk, curry, and a sweet touch of maple syrup. Perfect for your next Indian-fusion dinner, these beauties will also add a little excitement to your morning breakfast routine.

Makes 10

What You Need:

  • 2-1/2 cups unbleached white flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon curry powder
  • 3 tablespoons soy margarine
  • 1 cup coconut milk
  • 1 teaspoon maple syrup
  • 2 tablespoons water

What You Do:

  1. Preheat oven to 400 degrees. Combine flour, baking powder, salt and curry powder. Cut in margarine. Stir in wet ingredients until dough is formed. Turn onto work surface and knead for about 30 seconds. Pat or roll out to 3/4-inch thickness and cut with a biscuit cutter to make ten biscuits. Bake for 12 to 14 minutes in a preheated oven.
